Thalli - Dried Pushki / Hogweed Seeds

Known in Indian cuisine as Pushki, this spice is also considered a native of Ireland.

With delicious aromas of cardamom and citrus peel, this can be used in sweet or savoury dishes.
Grind to powder and use in curry with other spices. Use powdered seeds with salt to season a wide range of dishes.
Or infuse whole seeds into creamy sauces, syrups, vinegars and strain before serving. Pairs especially well with Sweet Woodruff in sweet recipes such as pies and ice cream.

Use sparingly: 1/4 teaspoon per serving.
